Peanut Butter Cookies

This has got to be the most ubiquitous cookie recipe in the world - equal parts peanut butter and sugar with an egg mixed in. It's on the Kr*ft peanut butter jars, if I remember correctly. This is with good reason though - it is easy, gluten free, and very, very good. The only tricky part is that the cookies are very tender when just baked, so they require careful handling to remove from the pan. I am using crunchy peanut butter, dark brown sugar, and some chopped up caramel and chocolate candy since I like some texture in the cookies. The post has a breakfast tag because I used to have one or two of these in the morning with a glass of soy milk before walking through Edmonton's river valley to work.

Mix together one cup of peanut butter and one cup of dark brown sugar with one large egg til blended. Chop up a handful of R*lo or similar candies and mix in to the batter if desired. Drop by teaspoons on ungreased baking sheet and flatten slightly. Bake at 325 deg F for ten to twelve minutes; makes about twenty cookies.

Those look delicious. They'd drop my blood sugar down by 10 a.m. if I ate them for breakfast, though.

I can't eat peanut butter, and when I get almond butter, I get the kind that's only almonds and nuts. Wonder if that would still work? Seems like it might be too runny.

Veggie, peanuts back home were 1/4 the price of other nuts and here it is more like 1/10, so they are going to be showing up in my posts a lot...I hope it is not peanuts themselves that you can't handle. I am not sure if the texture would work with the plain ground nut butter, but if you try it out let us know.

Pepper, it is in fact peanuts I am not supposed to eat, though slowly I am adding foods back, so maybe that will be one I have a tolerance to. I'd hate to miss out!

Lots of people have peanut allergies, though, especially younger people . . . so I hope you will make sure to include some that those people can use. :)

Awww, this was the very first recipe I learned, back when I was, um, like 6 or 7! Ok, second - if you count Kool-Aid as the first (back in the era when it involved lots of newspaper covering the floor and a giant cookie sheet to contain the mess I at age 5 would make putting it all together). I still make them!
